Sunny's Italian Sausage Holiday Stuffing - Ingredients

  • 1 pound Italian sausage, remove from casing and break up or chop
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 2 scallions, finely chopped
  • 1 cup finely chopped celery (about 2 stalks)
  • 1 cup finely chopped Vidalia or sweet onion
  • 1/2 cup dried cranberries
  • 2 packets Hidden Valley® Homestyle Italian Dressing & Seasoning Mix
  • 4 cups plain stuffing cubes
  • 4 cups low sodium chicken broth, plus more for texture
  • Cooking spray

Sunny's Italian Sausage Holiday Stuffing - Cooking Directions

  • Preheat oven to 350 degrees F. Saute the sausage. In a large pan on medium-high heat, add olive oil and sausage. Cook until heated through and browned. Remove to a large bowl along with any remaining fat from the pan.
  • Saute the vegetables and fruit. In the same pan add butter and melt on medium heat. Add scallions, celery, onion, cranberries and Hidden Valley® Homestyle Italian Dressing & Seasoning Mix. Cook while stirring until the vegetables are tender and cranberries become a bit plump, about 6-8 minutes. Remove all to the bowl with the sausage.
  • Mix stuffing. Add stuffing cubes to the bowl and toss. Pour over the chicken stock adding 1/4 cup or so more if cubes are not moist enough, this should feel like thick mashed potatoes.
  • Bake stuffing. Coat the bottom and sides of an 8" x 8" baking dish with cooking spray. Pour in stuffing and press down, leveling off the top with a rubber spatula or back of a spoon. Bake until top is golden, about 35-40 minutes.

Baked Brunch Omelet Recipes

This recipe is actually a very good breakfast casserole, but there are some key details missing. First you must use french bread in this recipe. You need all the crust to soak up the eggs and milk. I simply rip the loaf into bite size pieces with my hands, much easier than cubing it. Secondly, toss the bread, 1.5 cups ham cubes and 2-3 cups shredded cheese with 2-3 Tablespoons of flour before putting it all in the baking dish, it keeps the egg bake from being soggy.

Then, blend the eggs/milk in the blender with the other ingredients (I add 3 Tablespoons margerine and 1 tsp. dry mustard) and pour over the bread mixture. Cover and let it sit overnight in the fridge allowing the bread time to absorb the liquid. It will look almost too dry the next morning, but it's supposed to. I bake it at 350 for about an hour, uncovering it at about forty minutes. I do not put it in a water bath

Brown Sugar Smokies Recipes

If you want a WOW recipe ~ THIS IS THE ONE! Salty, Sweet and Savory ~ Men absolutely love it! I've made them 4 times now and they are always the first to go at a party. I only write this review (it has enough positives already!) because I found a way to make the cooking time go faster, produce less mess and get more sugar to "stick".

I cut the bacon into thirds (too much bacon makes the outside crisp but the inside still undercooked) , dredge both bacon and smokies in the sugar to marinate (per advice of other reviewers), set them on a large plate with paper towels underneath and microwave them for approximately 1 min 30 secs, checking on them at every 30 sec. interval.

After this, I switch the smokies into a pan and bake in the oven for 5 min and then, after sprinkling another layer of brown sugar, I broil for 4 or 5 min. The microwaving does the initial cooking and crisping of the bacon, but more importantly, catches all the fat that makes them greasy and tends to melt off the sugar. The additional cooking finishes off the baking and crisping and then the additional sugar and broiling produces that carmelized glaze. I also find that I don't need the toothpicks ~ I just stretch the bacon around and it sticks to itself. Enjoy! They're totally worth the fuss!
